In the geography called the Levant Region, the olive tree, known to have been domesticated in 4000 BC, was known as ‘zerdum’ in Akkadian and ‘gi-rim’ in Sumerian. Olive spread as the natural vegetation of the Eastern Mediterranean basin since ten thousand years BC.
In human history, olive is the 4th generation domesticated product after wheat, barley and peas.
In Hittite texts, olive is mentioned as follows; “Just as the olive holds oil in its heart, thus hold thou, o Mother-goddess, the king, queen, princes and the land of Hatti in friendliness in thy heart and soul!” (Güterbock H, 1968)
In ancient times, Anatolian cities defined olive as ‘liquid gold’.

We press our harvested olives within 24 hours after picking, using only the cold pressing
technique (between 18-26°C). After keeping the olive oil in steel tanks for a while, we prepare it for
sharing.
As in this harvest, our aim has always been to obtain strong aroma, low acidity and rich content.
